Since I updated to Unity 2018.2, my buildings no longer behave.
I'm beyond fucking upset. I have no idea how to solve this problem.

Is there any chance it is something obvious and simple and you will spot the moment you go back with fresh eyes?
Unlikely. I have moved the code back to the point where I made the video and then ran it up. I had to go through the rigmarole of updating but none of my code was changed.
I think my options are:
It's completely taken the fun out of this.
FIXED!
I can now sodding well place buildings again. Arguably they're better but I think not easier. Might need some finessing in the future. Also, you can see some smoke - although I've not finished messing with it.
Excellent stuff!
Thanks mate!
Also, forgot to mention something else that's not really obvious in this video: the Cloudship rocks under acceleration. Another bit of feedback you chaps gave. You can't see it here because I'm not giving a lot of welly, it's more obvious when you chuck it about (and with three boilers).
I now have another weird issue, that I've raised with Unity and that's the smoke stacks jitter whereas the rear vents do not. There's no difference between the settings (as far as I can see). Really odd.
It's not going to stop me but I'll pause on that bit and move onto giving the cannons some more player feedback.
I had a similar jitter when I was placing buildings with the mouse button pressed, I assumed is was a odd rounding error; it caused building placement to be a little tricky at times as the building would bounce in an out of valid placements positions (i.e. and when out would result in the whole attempt being cancelled).
